White Chocolate Pudding Cupcakes with Greek Yoghurt
These were a treat, although they were meant to be initially just plain cupcakes, after experimenting they turned into these. Unlike a normal cupcakes they have a crispy shell around the outside which tastes a bit like caramel and on the inside they are fluffy and soft. Since they dont have much flour in them, they had a dip in the centre which I thought would be perfect with a dollop of cream or yoghurt instead of icing as the cake is quite rich itself. Sometimes the end result of an experiment may turn out different, but better than you had hoped.
